WRIGHT COUNTY, Minn. — Stephanie Stuart, a single mother of three from Wright County, is among 440,000 Minnesotans affected by the recent lack of funding for federal SNAP benefits . Stuart, a trained social worker who lost her job in February, has relied on food stamps and food shelves to feed her three teenage children.
"I'm about ready to take a job at Cub Foods for $15 an hour," Stuart said.
With SNAP funding currently in limbo due to the government shutdown, her family is being forced to ration food and cut back on meals.
"We've had discussions about how much they need to be eating right now, how we need to ration," Stuart said. To ensure her kids get enough food, breakfast is now her only meal of the day. "The rest of the day I do smoothies and water," she said.
