After years of operating as a plant-based vegan pop-up with a comfort-food concept and riffs on fast-food, Street Beet is opening the doors this week to its brick-and-mortar location in Corktown.

The full-service restaurant, which says it will offer “diner nostalgia with dive-bar vibes,” opens Thursday, Dec. 11, in the former Bobcat Bonnie’s space on Michigan Avenue in Detroit. Bobcat Bonnie’s abruptly shuttered the Corktown location, its flagship restaurant, last March.

“We’ve dreamed of this space for years,” founder Meghan Shaw said in a release. “Bringing Street Beet home to Corktown feels unreal — this is our biggest leap yet, and we can’t wait to feed everyone again.”
