Recipes for onion soup have been found as far back as 1393, in Le Ménagier de Paris, with an early version also appearing in Taillevent’s 14th-century cookbook, Viandier. The modern version of French onion soup dates from the mid-18th and 19th century, when restaurants around Les Halles, the major food distribution center in Paris, began to serve a cheese-bedecked version to late night/early morning vendors, and to hung-over night-clubbers from the City of Light’s many attractions.
