The Evergreen Cow restaurant, long-awaited by many area residents, opens for business Aug. 7.

The location, formerly home to Maya’s Cantina, is nearly three times the size of its sister restaurant in Morrison. It also has a fireplace, a separate bar and garage doors that open to the town’s main street.

“It’s awesome,” said Ross Bradley, whose family-run company, the Ross-Lewis Trus,t owns the building and helped renovate it. “They’re a good family and they know how to run a restaurant.”

Morrison’s The Cow restaurant has long been a favorite of locals and visitors alike, garnering thousands of five-star Google ratings for its food, staff and atmosphere.
