HONOLULU (HawaiiNewsNow) - Award-winning restaurant Mugen at ESPACIO is introducing a new menu that allows for customization by diners that blends Hawaiian and global flavors.

Mugen is one of two restaurant recipients in Hawaii that earned the Forbes Five Star designation. In April, they were listed among the top 10 U.S. hotels for food and drink.

Executive Chef Colin Sato joined HNN’s Sunrise to serve up a lobster risotto dish and talk more about what’s new with Mugen.

Born and raised in Hawaii, Sato started in the industry as a busboy at a small local restaurant and has since taken off in the kitchen.

He and his mentor Chef Alan Wong worked on a dynamic menu for Mugen that represents Hawaii, using seasonal ingredients sourced locally and across the globe.
