LINCOLN – Here at The Local Scoop, we have a staff with a variety of skills, including some in the kitchen ... and some not. Regardless of skill level, everyone has at least one kitchen creation that seems so daunting, we are frightened enough to steer clear.

This month, I confronted one of my personal kitchen fears ... roasting a chicken.

I think it’s the gizzards that are scary, but it’s also the possibility of poisoning my family and friends with salmonella. So, I sat down with my cousin and household leader, Jessica Hunt, to roast a bird.

First, she said the gizzards are already bagged and ready to go. It may not be sustainably-forward, but those go directly in the trash for us.

“With a turkey, sure, but chicken doesn’t need gravy,” she said.
