Louisiana native, Ace Champion, moved to Wisconsin in 2003 to pursue his dreams in the culinary field, but ended up doing so much more.
In 2012, Champion graduated from Fox Valley Technical College with a degree in culinary arts, but found himself unsure of what to do after.
"The Green Bay food scene doesn't really cater to big-name chefs," Champion said. "There's lots of bars and things like that but not many high-end restaurants."
Finding it difficult to secure a typical, executive chef position in the area, Champion then decided to take a different direction with his skills and talents. Instead of working in restaurants, he decided to teach.
"I started working in a nursing home as a dietary chef," Champion said. "I would use my PTO to grow my business, which at the time was me teach
