KNOXVILLE, Tenn — A popular Cuban bakery announced plans to open a new location in West Knoxville after its original location was damaged by a fire last month.

"It's, you know, a lot of uncertainty," Ernesto Rodriguez, the owner of the bakery, said. "I'm wondering how we're gonna get there and how everything is gonna fall into place."

Pastelito's Cuban Bakery and Cafe's original location is located off North Cedar Bluff Road. The bakery had to close after a fire at a neighboring laundromat took out the business in early October.

"It's been ... really quite a struggle," said Rodriguez. "But we've been blessed with the help of a lot, a lot of people and support in the community."
