Bill Rishel was in Chicago for the International Livestock Exposition in 1966 when he saw something on the wall of a restaurant that changed his life.
The event was at the Union Stock Yards complex, and inside the upscale restaurant on the site were portraits of past winners of the Saddle & Sirloin Gallery, which is the hall of fame for the livestock industry.
