ONALASKA, Wis. — A pack of organic and spirit enthusiasts arrived in the Coulee Region in late July to follow the circle from grain grown at one farm to glass at a local distillery, and then back again.
The Coulee Region refers to an area within the Driftless Region of western Wisconsin that contains dry hill and river terrace sand prairies. It's home to McHugh Farms and La Crosse Distilling Co.
The July 17 field day organized by Marbleseed and OGRAIN began at the farm Patrick McHugh owns and operates, located on the ridge above where the Mississippi River connects to the Black River via Lake Onalaska.
The 1,000-acre diversified organic operation raises grains, produce, livestock and its own fertility through a large-scale composting system that has repurposed nearly 2 million pounds
