Senior writer Peter Holley begins by investigating tensions around growth in the ghost town of Terlingua. Then contributor Megha McSwain and barbecue editor Daniel Vaughn profile businesses that have made impacts on Texas’s food culture—Raja Sweets, an iconic Indian restaurant and confectionery with deep roots in Houston, and Smoke ’N Ash, a North Texas barbecue joint pushing smoked meats to new places.
