Andoori Spiced Salmon with Cous Cous and Tahini Lemon Sauce:

Ingredients:

1/2 cup cous cous

1/2 cup + 1 Tbl water

1 Tbl fresh lemon juice

1 Tbl olive oil

1 tsp salt

2 Tbl olive oil

1 tsp curry powder

1/2 can of garbanzo beans, drained

1/2 cup loosely packed mint leaves, chopped

1/2 cup loosely packed Italian parsley leaves, chopped

2 - 6-ounce pieces of salmon

3 Tbl neutral oil

Salt to taste

2 Tbl tandoori spice

Put cous cous in a shallow baking dish. Bring all other ingredients to a boil. Pour over the cous cous. Cover with clingfilm and let it set for 5 minutes. Uncover and fluff with a fork.
