FARGO — This Minty Bean Salad was inspired by the beautiful green and yellow string beans we found at the Market at West Acres last week. They were among the bounty of summer vegetables on display at the stand from Bill Erbes’ farm, and we could not resist purchasing a few pounds to enjoy over the weekend.
Once home, I turned to my garden for further inspiration and was delighted to find a handful of ripe cherry tomatoes, red onion and wild mint, ready to harvest. Light, fresh and rustic, this Minty Bean Salad is a vibrant celebration of summer flavor.
I scaled this recipe to accommodate four to six servings, and it can easily be doubled for larger gatherings. This is a simple recipe that can be assembled in about 15 minutes, from start to finish.
